How do I  explain to a person of another faith that we do not confess to a "man"?

Short Answer: The following scriptures should assist:
Matthew 9:2-8 (the Son of Man has authority to forgive sins) 
John 20:21-23  As the Father has sent me, so I send you. And when he had said this, he breathed on them and said to them, "Receive the holy Spirit. Whose sins you forgive are forgiven them, and whose sins you retain are retained." 
Again in Matthew 18:18 "Amen, I say to you, whatever you bind on earth shall be bound in heaven, and whatever you loose on earth shall be loosed in heaven." 
Also look up 2 Cor 5:17-20 (giving us the ministry of reconciliation), James 5:13-15 (prayer of presbyters forgives sin).
James 5:16 (confess your sins to one another).

Do we worship Mary and the Saints?

Short answer: No, we do not "worship" Mary and the saints. We ask for their intercession. In the same way that someone would go to a priest or someone close to God to ask him or her to pray for us, so too do we go to Mary and the saints to intercede for us. We believe that they lived a holy life and now live with God in Heaven.

Did Jesus have any brothers and sisters?/ Did Mary have other children besides Jesus?

Short answer: No, Mary had no children besides Jesus. She remained a virgin. In Aramaic and Hebrew - the languages spoken during the time of the Old and New Testaments - there were no separate words to distinguish between cousin, half brother, nephew and brother or sister, niece etc.

Did Jesus intend the Bread and Wine of the sacrament of Holy Eucharist to be just symbols of His body and blood?

Short answer: No. Jesus was very specific when He said in John 6:53 "... if you do not eat the flesh of the Son of Man and drink his blood, you will not have any life in you." He did not try to further explain himself, as he often did when he spoke in parables, nor did he attempt to reassure his many followers (who were incensed by his statement and were leaving), that he was only speaking figuratively.
